It's nice in Whitney that the salad bar is always open, I've found that that has been my best alternative for the meatless meals I've been trying to implement. A positive of this challenge, besides the environmental benefits, is that I have been eating more vegetables as one of my big alternatives of meat, so I've been feeling really good as well! -
McKenna Mobley 11/06/2023 2:09 PMIt was super nice outside today, so I took a walk down in the marsh to clear my head for the upcoming week. It was so nice and relaxing to be out in nature, and it made me feel more grounded. This also helped me do my mindfulness activity for the day, as I wasn't on my phone or even listening to music. -
McKenna Mobley 10/30/2023 1:53 PMMy campus ecochallenges are going well! I have challenged myself to eat two meals a day that are meatless, and to adopt a "needs vs. wants" approach. So far the meatless meals have gone well, I eat in the dining hall on campus and normally there are a few different meatless options that help make it easier. I have been feeling good, I think the general incorporation of other foods (ex. more vegetables) that come with it have been making me feel better after eating. The "needs vs. wants" has been a bit more difficult, I definitely have to slow down and remind myself of it, just because I like to shop and to buy coffees around campus. However, I like knowing that I'm lessening my consumerism, it's definitely a good feeling. I think that the feel-good-ness that surrounds these actions is something useful to note, it definitely makes me feel like I'm being more mindful and that makes me want to keep going.
